Small parcels from individual blocks are lightly crushed and destemmed into stainless steel open-top fermenters with minimal pumping or handling. The must is then held cold for around 6 days before being slowly warmed and inoculated with yeast specifically selected by our winemaker. The fermentation is carried out at warm temperatures of up to 35°C, which combined with regular gentle cap plunging and an extended maturation period on skins allows for a gentle and balanced extraction of colour and tannin. At the end of the maturation period, the wine is drained and pressed without settling directly to French oak barriques. Once the secondary malo-lactic fermentation is complete each batch is rigorously tasted and graded - with only the best barrels making it to the final blend. The resulting juice was then moved without settling to a selection of both new and old French oak barriques for fermentation. Specially chosen yeasts were used to inoculate the majority of the barrels, with a small proportion left to undergo a natural or ‘wild’ fermentation with indigenous yeasts. After fermentation was complete each barrel underwent twice weekly batonage - or lees stirring - promoting yeast autolysis which adds both body and complexity to the wine. Malolactic fermentation naturally occurred once the weather warmed in the spring, with barrel batches carefully monitored during this time. Once the MLF had finished each barrel was individually assessed, with only the best barrels making it to the final blend. The season began with cooler temperatures during flowering – impacting fruit set and resulting in low to moderate yields throughout the blocks. The cooler temperatures continued into the summer months, which also brought high than usual levels of precipitation to the region. The 2015\/2016 growing season started with warm spring temperatures in October and November, followed by dry weather in the early flowering period. Temperatures fell mid-flowering, resulting in lower crop levels throughout the block - however some fruit thinning was conducted especially to avoid overlapping bunches (de-clumping) to improve air circulation and increase fruit exposure. Meticulous vine management from our vineyard team helped to open the canopy and even outcrop levels as well as reducing disease pressure. Warmer conditions after veraison and up to harvest aided the ripening process. Yields were disappointingly light on most areas, and varieties. However excellent flavours were present in the fruit, and good ripeness was achieved. Once at the winery the grapes were gently pressed – with the free-run initially kept separate from the harder pressings. After both the free-run and pressings had settled they were racked to stainless steel tanks for fermentation with carefully selected strains of aromatic yeast. Once the ferment was complete, the wine was racked off yeast lees and left to mature in tank for around two months. After bottling, the wine was held back to allow it to further develop in the bottle before being deemed ready for release in late July 2016.\u003c\/p\u003e\n\u003ch2\u003eViticulture\u003c\/h2\u003e\n\u003cp\u003eGrapes for this wine are grown entirely on our stunning Whenua Matua vineyard located in the Upper Moutere area of Nelson. Heavy clay soils and abundant sunshine help our fruit gain intensity and structure while attention to detail in the vineyard with practices such as leaf plucking, shoot thinning and an open style of canopy management aid in delivering clean, concentrated fruit. The 2014\/2015 started with a mild spring; however cooler weather in November slowed the growth in the vines considerably. Cool and damp conditions over flowering resulted in a much lighter fruit set than expected throughout the many blocks. Drought conditions from January meant that unlike most years we were unable to dry farm, and the blocks had to be irrigated. Meticulous vine management from our vineyard team kept the fruit disease-free, despite high pressure caused by mild night temperatures and high dew fall.
